Thai-Style Chicken Curry Soup

Spicy 15-minute chicken soup - a warm and welcoming dish for your loved ones.
Ingredients:
  • 1 carton (32 oz) Progresso™ chicken broth (4 cups)
  • 3 tablespoons packed brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons curry powder
  • 1 small red bell pepper, coarsely chopped (1/2 cup)
  • 1 small jalapeño chile, seeded, finely chopped (1 tablespoon)
  • 2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
  • 2 tablespoon chopped fresh cilantro, if desired
Instructions:
  • In a 3-quart saucepan, combine all ingredients except the chicken and cilantro. Bring to a boil over medium-high heat, then reduce to medium and simmer uncovered for 3 to 5 minutes until the bell pepper is crisp-tender.
  • Add the chicken and stir until heated through for 1 to 2 minutes. Right before serving, sprinkle in the fresh cilantro.
