Cozy up with a fragrant Thai chicken curry this winter!
Ingredients:
  • 700g chicken breast fillet, cut into 2cm pieces
  • 168.00 gm Thai Green Curry Paste
  • 18.40 gm vegetable oil
  • 1 tsp sesame oil
  • 1 red onion, finely chopped
  • 2cm piece ginger, grated
  • 20.00 ml Tamarind Puree*
  • 270ml can Light Coconut Milk
  • 3 makrut lime leaves*
  • 2 lemongrass stems, white part only
  • 100g frozen peas
  • 60ml fish sauce
  • 21.00 gm light soy sauce
  • 20.80 gm chilli sauce
  • 200g snow peas, sliced on the diagonal
  • 42.00 gm lime juice
  • Leaves of 1 bunch coriander, chopped, plus extra leaves to garnish
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve
  • 4 spring onions, sliced on the diagonal
Instructions:
  • In a bowl, gently coat the chicken with half the aromatic curry paste. Allow it to marinate in the refrigerator for 15 minutes, developing flavors.
  • In a large, deep frypan over medium heat, heat the oils until shimmering. Add the onion and cook, stirring occasionally, until softened. Stir in the ginger and cook for 1 minute.
  • Stir in the rest of the curry paste briefly. Mix in the chicken and cook for 5 minutes. In a jug, combine tamarind puree with 150ml boiling water until dissolved. Pour the mixture into the pan along with coconut milk, lime leaves, and lemongrass.
  • Gently simmer the mixture, being careful not to bring it to a boil to ensure the chicken stays tender. After 10 minutes, stir in the peas, fish sauce, soy sauce, and chili sauce.
  • After cooking for 5 minutes, introduce snow peas and continue cooking for an additional minute. Taste the dish and adjust seasoning to your liking, if needed.
  • Incorporate lime juice and chopped coriander, blending flavors seamlessly.
  • To plate, arrange the dish over a bed of fluffy rice. Squeeze fresh lime wedges over the top and sprinkle with chopped spring onion and vibrant coriander leaves for a burst of freshness and flavor.
