Indulge in a fragrant Thai coconut soup with galangal, lime leaves, coconut milk, and shrimp. Quick and comforting!
Ingredients:
  • 1 pound medium shrimp - peeled and deveined
  • 2 (13.5 ounce) cans canned coconut milk
  • 2 cups water
  • 1 (1 inch) piece galangal, thinly sliced
  • 4 stalks lemon grass, bruised and chopped
  • 10 makrut lime leaves, torn in half
  • 1 pound shiitake mushrooms, sliced
  • 0.25 cup lime juice
  • 3 tablespoons fish sauce
  • 0.25 cup brown sugar
  • 1 teaspoon curry powder
  • 1 tablespoon green onion, thinly sliced
  • 1 teaspoon dried red pepper flakes
Instructions:
  • Bring a pot of water to a boil. Cook shrimp for 1 minute until done. Drain and set aside.
  • In a large saucepan, combine coconut milk and 2 cups of water. Bring to a gentle simmer. Add galangal, lemongrass, and lime leaves. Simmer for about 10 minutes to infuse the flavors.
  • Pour the coconut milk through a strainer into a separate pan, removing the spices. Cook the shiitake mushrooms in the coconut milk for 5 minutes over low heat. Add lime juice, fish sauce, and brown sugar, then mix well. Season to your liking with curry powder.
  • When ready to serve, warm up the shrimp in the soup and spoon into bowls. Top with fresh green onion and a sprinkle of red pepper flakes for added flavor and presentation.
