Thai-inspired grilled beef with bold, smoky flavors.
Ingredients:
  • 2 long red chillies
  • 20.00 ml kecap manis
  • 65.63 gm lime juice
  • 2 garlic cloves, crushed
  • 20.00 ml grated palm sugar
  • 2 tsp sesame oil
  • 500g piece beef rump steak, trimmed
  • canola oil cooking spray
  • 125.00 ml fresh coriander leaves
  • 125.00 ml fresh Thai basil leaves, torn (see note)
  • 125.00 ml roasted unsalted peanuts, chopped
Instructions:
  • Finely chop 1 chilli. Combine the chopped chilli, fish sauce, kecap manis, lime juice, garlic, sugar, and oil in a jug, then whisk thoroughly. Transfer half of the mixture to a large shallow ceramic dish. Reserve the other half in the refrigerator. Place the beef in the dish and coat it with the mixture. Cover and refrigerate for 3 hours.
  • Prepare the barbecue plate or chargrill by spraying it with oil and heating it over medium-high heat. Cook the beef for 3 to 4 minutes on each side for a medium doneness or until it reaches your desired level of doneness. Transfer the beef to a plate, cover loosely with foil, and set aside for 5 minutes to allow it to rest. Finally, thinly slice the beef before serving.
  • Prepare the remaining chili by removing the seeds and thinly slicing it. Arrange the beef on a platter and top it with coriander, basil, peanuts, and the sliced chili. Finish by drizzling the remaining sauce mixture over the beef before serving.
