Grilled Thai pork skewers with flavorful marinade and delicious dipping sauce.
Ingredients:
  • 0.33333334326744 cup granulated sugar
  • 0.25 cup white vinegar
  • 0.25 cup fresh lime juice
  • 2 tablespoons fish sauce
  • 2 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons Melt® Organic Buttery Spread
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 3 garlic cloves, minced
  • 0.5 teaspoon pepper
  • 2 (1 pound) pork tenderloins, trimmed of all visible fat and cut into 3x1/4-inch long strips
  • 0.5 cup lightly packed fresh cilantro
Instructions:
  • Combine granulated sugar, vinegar, lime juice, fish sauce, minced garlic, and red pepper flakes in a bowl and set aside to serve later.
  • Mix buttery spread, fish sauce, soy sauce, brown sugar, garlic, and pepper in a bowl. Pour the marinade over the pork in a sealed plastic bag. Shake well to coat the pork evenly. Refrigerate and marinate for up to 1 hour.
  • Skewer 2 pieces of pork together in a weaving pattern.
  • Prepare the charcoal grill by opening the bottom vents fully. Ignite 100 briquettes (6 quarts) in a large chimney starter. Once the coals are glowing, spread them evenly on the grill. Place the cooking grate on top, cover the grill, and let it heat up for about 5 minutes.
  • Preheat the gas grill on high with the lid closed for about 15 minutes. Oil the cooking grate and adjust the burners to keep the heat high.
  • Place the skewers on the hot grill and cook until the pork is fully cooked and has a slight char, about 7 to 10 minutes, flipping them halfway through.
  • Place the skewers on a serving platter and allow them to rest for 5 minutes. Slide the pork off the skewers, sprinkle with cilantro leaves, and serve with the sauce on the side.
