Thanksgiving Dinner Pie

Easy Thanksgiving turkey pie with cranberry topping made delicious with Bisquick® mix.
Ingredients:
  • 1 lb ground turkey
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 bag (24 oz) refrigerated mashed potatoes
  • 2 to 3 teaspoons prepared horseradish
  • 4 oz provolone cheese, shredded (1 cup)
  • 1/2 cup Original Bisquick™ mix
  • 1 cup milk
  • 2 eggs
  • 1/4 cup chopped fresh Italian (flat-leaf) parsley
  • 1 can (14 oz) whole berry cranberry sauce
  • Fresh parsley sprigs, if desired
Instructions:
  • Preheat oven to 400°F and lightly coat a 9-inch glass pie plate with cooking spray. In a 12-inch skillet, sauté turkey, onion, salt, and pepper over medium-high heat for 6 to 8 minutes until turkey is cooked through. Remove skillet from heat and transfer the turkey mixture into the prepared pie plate.
  • While the mashed potatoes are cooking in the microwave following package instructions, combine 2 cups of the potatoes with the horseradish in a small bowl. Spread this mixture evenly over the turkey, reserving the rest of the potatoes for later use. Sprinkle with cheese.
  • Combine Bisquick mix, milk, eggs, and parsley in a small bowl until well mixed, then pour the batter over the cheese.
  • Bake for 28 to 32 minutes until a knife inserted in the center comes out clean. Allow to rest for 5 minutes before serving, then top each serving with cranberry sauce and garnish with parsley sprigs.
