Indulge in exquisite homemade beef carpaccio: Thinly sliced rich beef served with tangy sauce, Parmesan, capers, and arugula for a simple yet elegant appetizer.
Ingredients:
  • 1 pound beef tenderloin
  • 1/2 cup mayonnaise
  • 3 tablespoon lemon juice, divided
  • 2 anchovies
  • 1/2 teaspoon freshly ground black pepper, divided
  • 4 cups baby arugula
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 cup capers
  • 1/2 cup shaved Parmesan cheese
  • baguette slices for serving (optional)
Instructions:
  • Tightly wrap the beef in plastic wrap and freeze until slightly firm, approximately 1 hour. Chill 4 large plates in the fridge until serving time.
  • To make the sauce, blend mayonnaise, 2 tablespoons of lemon juice, anchovies, and 1/4 teaspoon of pepper in a food processor until smooth. Set aside.
  • Unwrap the beef and thinly slice it with a sharp knife. Divide the slices onto 4 chilled plates in a single layer.
  • Mix arugula with the rest of the lemon juice, pepper, olive oil, and salt. Arrange the arugula mixture in the middle of the beef. Drizzle the reserved sauce evenly over the top, then sprinkle with capers and cheese. Serve right away with baguette slices.
