Duck fat-roasted twice-cooked potatoes - a classic delight.
Ingredients:
  • 1kg King Edward potatoes or pontiac potatoes, peeled, chopped into 3cm pieces
  • 40.00 ml duck fat
  • 40.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • Preheat the oven to 190C. Boil potatoes in salted water until parboiled, about 5 minutes. Drain and return to the pan, shake over medium heat to dry and rough up the edges for crispy roasting.
  • Melt duck fat in a roasting pan in the oven for 3-4 minutes. Carefully coat potatoes in the hot fat, season, and roast at 400°F, turning once, until golden and crisp, about 35-40 minutes.
  • Garnish with freshly chopped parsley before serving.
