Indulge in irresistibly crispy roast potatoes, with a golden exterior and fluffy interior. Boil before baking for creamy insides, blend oil and butter for extra crunch, and finish at high heat for ultimate crispiness. Elevate your roast dinners forever.
Ingredients:
  • 1kg medium sebago potatoes, peeled, quartered (see note)
  • 10g butter
  • 18.20 gm extra virgin olive oil
  • 2.40 gm sea salt flakes
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a large baking tray.
  • Place the potato in a saucepan with cold water, bring to a boil, and simmer for 5 minutes until just tender. Drain the potato and return it to the pan. Shake over low heat for 30 seconds to create a rough surface, then cool for 10 minutes.
  • In a small microwave-safe jug, combine butter and oil. Microwave on HIGH for 20 seconds, or until the butter melts and the mixture is well combined.
  • Arrange the potato slices evenly on the tray. Drizzle with the flavorful butter mixture, then generously sprinkle with salt and pepper for the perfect seasoning.
  • Roast the potatoes for 45 to 50 minutes until they are light golden. Then increase the heat to 220°C/200°C fan-forced and continue roasting for another 15 minutes until they are golden and crisp. Serve hot.
