The Denver Omelet

Chef John's Denver omelet: Fluffy eggs stuffed with bell pepper, smoked ham, onions, and melty Cheddar cheese.
Ingredients:
  • 3 large eggs
  • 1 tablespoon butter
  • 0.25 cup diced smoked ham
  • 2 tablespoons diced onion
  • 2 tablespoons diced green bell pepper
  • salt and freshly ground black pepper to taste
  • 0.33333334326744 cup shredded Cheddar cheese
  • 1 pinch cayenne pepper
Instructions:
  • Whisk eggs in a small bowl until just mixed; avoid overmixing.
  • In a skillet over medium-high heat, melt butter until sizzling. Add ham, onion, and bell pepper with a generous sprinkle of salt and pepper. Sauté and stir until onions turn soft and ham caramelizes, approximately 5 minutes.
  • Lower heat to medium-low and gently add eggs to the pan. Swirl the pan while using a spatula to lightly mix the eggs for even distribution. Glide the spatula around the edges of the omelet. Sprinkle Cheddar cheese and cayenne pepper on top.
  • Continuously cook until the top is slightly moist but not liquid, for around 5 minutes. Carefully fold the omelet in half using a spatula and place it on a plate.
