Ingredients:
  • 800 g Maris Piper potatoes
  • sunflower oil
Instructions:
  • Prepare 800g of Maris Piper potatoes by chopping them into finger-sized chips with the skin on. Heat oil to a depth of 8cm in a large sturdy pan over medium-high heat. Test the temperature by frying a raw chip - it should float and fry at around 140°C. Gently lower the chips into the oil and blanch for about 8 minutes until soft but not colored. Remove and cool on a tray. Increase the heat, fry a blanched chip to test at 180°C, the ideal temperature for crispy outsides and fluffy middles. Fry the chips in batches until golden, then drain on kitchen paper, season with sea salt, and serve immediately.
