Indulgent chocolate morning glory muffins bursting with cocoa and chocolate chips - the perfect breakfast treat!
Ingredients:
  • 1 cup chocolate chips
  • 1 cup brown sugar
  • 0.875 cup whole wheat flour
  • 0.25 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 cup soy milk
  • 0.25 cup grapeseed oil
  • 0.25 cup unsweetened applesauce
  • 2 eggs
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare a muffin tin by greasing it or lining it with paper liners.
  • Combine chocolate chips, brown sugar, flour, cocoa powder, baking soda, baking powder, and salt in one bowl. In a separate bowl, mix soy milk, oil, applesauce, eggs, vinegar, and vanilla extract. Gently fold the wet ingredients into the dry ingredients until just combined. Fill muffin cups with batter, filling each cup to 3/4 full.
  • Bake in the oven preheated to perfection for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
