Chickpea chocolate biscuits

Ingredients:
  • 240g (1 can) canned chickpeas, rinsed and drained
  • 2 eggs
  • 130g (1/2 cup) natural peanut butter (smooth or crunchy)
  • 70g (1/3 cup) Natvia
  • 50g (1/2 cup) desiccated coconut
  • 40g (1/3 cup) cocoa powder, sifted
  • 2.50 gm ground cinnamon
  • 4.00 gm baking powder
Instructions:
  • Preheat the oven to 170C and line a big baking tray with parchment paper.
  • Combine chickpeas and eggs in a food processor and blend until smooth, making sure to scrape down the sides as needed. If you don't have a food processor, a stick blender works just as well.
  • Combine the rest of the ingredients until a firm, slightly sticky dough forms. Mix by hand if desired.
  • Shape mixture into balls, slightly flatten, and place on baking tray 2-3cm apart. Bake in the middle of the oven for 10-15 minutes until firm to touch and surfaces crack slightly.
  • Cool the freshly baked treats on the tray for 10 minutes before moving them to a wire rack to cool thoroughly. Enjoy them best while warm, and if not, they are delicious within a few days of baking when stored in an airtight container.
