Indulgent chocolate chip cookies featuring a surprising twist of coconut butter and chickpeas for added nutrition and texture.
Ingredients:
  • 1 (15 ounce) can chickpeas
  • 0.5 cup packed brown sugar
  • 0.25 cup coconut oil
  • 0.5 cup peanut butter
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 0.5 cup oats
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare your baking sheet with a touch of grease or parchment paper.
  • Blend chickpeas until smooth.
  • In a large bowl, combine butter, brown sugar, and coconut oil until well blended. Mix in eggs, vanilla extract, and peanut butter. Gently fold in pureed chickpeas followed by whole wheat flour, all-purpose flour, oats, baking soda, cinnamon, salt, and chocolate chips.
  • Spoon cookie dough onto the prepared baking sheet.
  • Place the cookies in the oven already preheated, baking for roughly 10 minutes. Then, take them out and let the cookies cool on a wire rack.
