These Crispy Parmesan Potatoes Make Every Meal Better

Crispy Parmesan potatoes: Quick, easy, and irresistibly crispy with rich cheesy flavor.
Ingredients:
  • 2 tablespoons olive oil
  • 3 garlic cloves, finely grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne (optional)
  • 1 tablespoon finely chopped parsley, plus more for serving (optional)
  • 1 1/2 pounds (24 ounces) yellow baby/new potatoes, cleaned and patted dry
  • 2 ounces (nearly 3/4 cup) grated Parmesan (see recipe note)
Instructions:
  • Preheat your oven to 400°F, ensuring the rack is in the middle position. Line a rimmed baking sheet with parchment paper for easy cleanup.
  • Make the flavorful olive oil mixture by combining olive oil, grated garlic, onion powder, kosher salt, freshly ground black pepper, cayenne (optional), and finely chopped parsley (optional) in a large bowl. Mix well.
  • Prepare the potatoes: Halve each potato and toss them in the olive oil mixture as you go to prevent browning. Coat the potatoes thoroughly with the oil mixture, then add the Parmesan and coat lightly to ensure the cheese spreads evenly without clumping.
  • Place the potatoes on the baking sheet lined with parchment paper, ensuring the cut side is facing down. Spread any remaining Parmesan mixture from the bowl onto the flat sides of the potatoes. Feel free to position the potatoes close together on the sheet. Roast in the oven until the potatoes are fork-tender and the Parmesan is a rich golden brown color, about 25 to 35 minutes. Remember to rotate the pan halfway through the cooking time.
  • Serve: Take out the baking sheet from the oven and allow the potatoes to sit for 5 minutes to let the Parmesan cool and crisp up. Carefully flip the potatoes over to display their golden brown, cheesy side and transfer to a serving platter. Sprinkle with additional parsley and serve immediately. Leftover potatoes can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, preheat the oven to 375°F with a rack in the middle position. Line a baking sheet with parchment paper, place the leftover potatoes cut side down, and reheat until hot and the Parmesan is crispy again, about 5 to 10 minutes. Alternatively, air fry the potatoes.
