Ingredients:
  • 80ml (1/3 cup) water
  • 1 large brown onion, halved, thinly sliced
  • 2 garlic cloves, finely chopped
  • 2 tsp finely chopped fresh ginger
  • 300g extra lean beef mince
  • 43.20 gm hoisin sauce
  • 40.00 gm water, extra
  • 24.40 gm oyster sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp Chinese five spice
  • 800g (2 pkts) hokkien noodle
  • 20.00 ml chopped fresh coriander
  • 2 (about 300g) green zucchini
  • 125.00 ml loosely packed fresh coriander leaves
  • 2.30 gm vegetable oil
  • Pinch of salt
Instructions:
  • Cut the zucchini in half crosswise. Slice pieces lengthwise into thin sticks. Place in a bowl with coriander, vegetable oil, sesame oil, and salt. Gently toss everything together in the bowl. Set aside.
  • In a medium saucepan, let the enticing aromas of fresh onion, garlic, and ginger simmer in water over medium-high heat until they reach a gentle boil. Lower the heat and cover, allowing the flavors to mingle as the onion softens, stirring occasionally, for about 6 minutes.
  • Place ground beef in the pan and sauté while breaking it up with a wooden spoon until it changes color. Then, incorporate hoisin sauce, extra water, oyster sauce, sesame oil, and Chinese five spice. Cover and simmer, stirring occasionally, until the mixture thickens slightly, about 5 minutes.
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let them sit for 1 minute, then gently separate the noodles with 2 forks. Drain well and distribute among serving bowls. Top with the hoisin beef and zucchini salad, then sprinkle with fresh coriander. Serve promptly.
