Indulge in crispy, thick-cut fries seasoned with flaky sea salt.
Ingredients:
  • 1.2kg (about 4 large) Golden Delight potatoes, peeled
  • Vegetable oil, to deep-fry
  • 7.20 gm sea salt flakes
Instructions:
  • Slice the potatoes into 1cm-thick slices, then cut the slices lengthways into batons. Place them in a large bowl, cover with boiling water, and let sit for 10 minutes to blanch. Drain and pat dry with paper towel.
  • Heat oil in a large, deep saucepan until it reaches 180°C (use the bread cube test to check readiness). Fry one-third of the chips for 5 minutes until cooked but not colored. Remove with a slotted spoon onto a wire rack over a paper towel-lined baking tray. Repeat with remaining batches. Let cool for 15 minutes before serving.
  • Heat the oil to 190°C over medium-high heat until a cube of bread turns golden brown in 10 seconds. Fry one-third of the chips for 5-7 minutes until crispy and golden. Drain on a wire rack. Repeat with remaining chips in 2 more batches. Sprinkle with sea salt before serving.
