Gluten-free, keto thin-crust pizza dough that's sturdy and tastes like the real deal, without cream cheese.
Ingredients:
  • 2 teaspoons yeast
  • 2 tablespoons warm water
  • 1.5 cups shredded part-skim mozzarella cheese
  • 1 large egg, lightly beaten
  • 1 cup blanched almond flour
  • 1 teaspoon xanthan gum
  • 0.125 teaspoon salt
Instructions:
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together yeast and warm water until dissolved. Let it sit for approximately 5 minutes.
  • In a microwave-safe bowl, melt mozzarella cheese for 90 seconds, stirring every 30 seconds until completely melted. Mix in yeast mixture and egg; the mixture may not fully combine at this stage.
  • Combine almond flour, xanthan gum, and salt into the mixture. If the mixture is challenging to blend, warm it in the microwave for 20-30 seconds to soften the cheese. Stir thoroughly until well combined. Knead the dough using your hands for 2 minutes.
  • Gently transfer the dough onto a baking sheet and use your fingers to create a thin crust, shaping it to a diameter of 11-12 inches.
  • Bake in the preheated oven until the crust is lightly browned, approximately 10 minutes. Remove from oven, add your favorite pizza toppings, and bake for another 5 minutes, or until the cheese is melted.
