Freeze these irresistible Maltese cheesy pastries for effortless entertaining.
Ingredients:
  • 300g fresh ricotta cheese
  • 165.00 ml coarsely grated mozzarella cheese
  • 125.00 ml finely grated parmesan cheese
  • 2 eggs, lightly beaten
  • 4 sheets frozen puff pastry, partially thawed
Instructions:
  • In a bowl, gently mash the ricotta until smooth. Mix in mozzarella and parmesan, season with salt and pepper, then stir well. Add half of the egg and stir until fully combined.
  • Preheat the oven to a toasty 220C/200C fan-forced while you prepare two baking trays with a snug layer of baking paper.
  • Cut 5 rounds from each pastry sheet using a 10cm round cutter. Brush the edges of the rounds with egg. Spoon 1 level tablespoon of the mixture onto the center of each round and spread it into a 5cm log. Fold up two sides of the pastry to enclose the log, pinching to seal. Twist the ends to form points and place on the prepared trays. Finally, brush with the remaining egg.
  • Bake until golden and puffed, 20-25 minutes. Let stand for 4 minutes before serving.
