Indulge in a savory mushroom noodle dish - a delicious, guilt-free, and fiber-rich option for mushroom enthusiasts.
Ingredients:
  • 185g wide long-life noodles
  • 1 bunch broccolini
  • 9.20 gm vegetable oil
  • 8 green shallots, ends trimmed, diagonally cut into 8cm lengths
  • 80ml (1/3 cup) hoisin sauce
  • 1 x 150g punnet oyster mushrooms
  • 1 x 100g punnet shiitake mushrooms, halved
  • 1 x 100g punnet enoki mushrooms
Instructions:
  • Boil noodles in a saucepan of water as per package instructions until tender. Drain and return to covered pan.
  • Separate the broccolini florets and set aside, then thinly slice the stalks lengthwise.
  • Heat the oil in a wok over medium-high heat. Stir-fry broccolini until tender crisp. Add shallots and cook for 2 minutes. Stir in hoisin sauce, oyster and shiitake mushrooms, and cook for 2-3 minutes. Lastly, add enoki mushrooms and stir-fry for 1 minute.
  • Divide the noodles into bowls, then generously top with the delicious mushroom stir-fry and serve right away.
