Almost-instant mushroom noodles

Whip up quick and delicious instant noodles for a satisfying meal in no time!
Ingredients:
  • 30g butter
  • 36.40 gm olive oil
  • 200g swiss brown mushrooms, sliced
  • 2 cloves garlic, sliced
  • 2 x 75g packets 2-minute noodles (see note)
  • 120g packet baby spinach
  • Roughly chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • In a hot frying pan, combine oil and butter. Toss in mushrooms and cook until golden, stirring occasionally for 3 to 4 minutes. Stir in garlic and cook for an additional minute.
  • While waiting, heat a saucepan of water until boiling. Add the noodles and cook for 2 minutes. Drain the noodles, saving 1/2 cup of the cooking liquid.
  • Toss spinach with mushrooms and cook briefly. Add noodles, then mix flavor packet with cooking liquid and combine with mushrooms.
  • Transfer the dish into individual serving bowls and garnish with a sprinkle of freshly chopped parsley.
