Spice up your barbecue prawns with a delicious Indian twist!
Ingredients:
  • 60ml sunflower oil
  • 1 small red chilli, seeds removed
  • 2cm piece ginger, grated
  • 1 garlic clove, finely chopped
  • 2 tsp garam masala
  • 3/4 tsp ground turmeric
  • 24 green prawns, peeled (tails intact)
  • 280g yoghurt
  • 40.00 ml chopped mint, plus extra to garnish
  • 2 mangoes, flesh chopped
Instructions:
  • Begin by soaking 24 bamboo skewers in water for 30 minutes to prepare them. Next, blend oil, lime juice, chili, ginger, garlic, and spices until smooth. Then, combine the prawns with the marinade in a resealable bag, ensuring they are well coated, and refrigerate for 30 minutes for maximum flavor infusion.
  • Skewer the prawns. Mix together yogurt, mint, and mango, saving some mango for garnishing. Set aside the raita.
  • Preheat a barbecue or chargrill pan over high heat. Cook prawns in batches for 2 minutes, turning until cooked through. Serve with raita and extra mint.
