Elevate your race day with a mouthwatering Sirloin and Brisket Burger Dog topped with creamy white Cheddar on a toasted bun.
Ingredients:
  • 10 ounces sirloin steak tips
  • 10 ounces beef brisket, trimmed of fat, cut into small chunks
  • 0.25 cup mayonnaise
  • 1 shallot, minced
  • 0.25 cup wild game rub (see footnote)
  • 4 whole wheat hot dog buns
  • 4 slices white Cheddar cheese
  • Salt and pepper to taste
  • Lettuce leaves
  • Sliced tomatoes
  • Chopped onion
  • Relish
Instructions:
  • Preheat the outdoor grill to high heat and grease the grate lightly.
  • Grind the sirloin and brisket in a food processor until finely mixed.
  • Place the meat in a spacious bowl and combine with mayonnaise, shallot, and wild game rub, stirring gently.
  • Divide the meat into 4 equal portions and shape each into hotdog-like burgers.
  • Grill with the lid closed for 4 minutes, then flip the burger dogs and continue grilling with the lid closed.
  • Toast the hot dog buns until lightly crisp, then leave them aside.
  • Achieve a perfect charred flavor by searing the burger dogs on all sides for about 2 1/2 minutes each for a medium cook, or until the internal temperature hits 140 degrees F. In the last minute of grilling, crown each burger dog with a slice of cheese.
  • Place the burger dogs onto the grill buns and season with salt and pepper to your liking. Top with your preferred condiments before serving.
