Delicious bite-sized pecan tarts, perfect for festive dessert platters.
Ingredients:
  • 0.5 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 1 cup all-purpose flour
  • 1 egg
  • 0.75 cup packed brown sugar
  • 1 tablespoon margarine, melted
  • 0.5 cup chopped pecans
Instructions:
  • Preheat the oven to 325°F (165°C) for a perfectly baked dish.
  • Cream together the softened margarine or butter with cream cheese until well mixed. Gently mix in the flour until just combined.
  • Press a rounded teaspoon of pastry evenly into the bottom and up the sides of 24 ungreased 1 3/4 inch mini muffin cups.
  • In a bowl, vigorously whisk together one egg, rich brown sugar, melted margarine or butter, and finely chopped pecans until well combined.
  • Spoon 1 heaping teaspoon of pecan filling into each pastry-lined muffin cup. Bake at 325 degrees F (165 degrees C) for approximately 30 minutes until the pastry is golden and the filling is puffed. Allow to cool briefly in the muffin cups before transferring to a wire rack to cool completely.
