Tiny Caramel Tarts

Delicious mini caramel custard tarts, a perfect Thanksgiving treat.
Ingredients:
  • 2 cups sugar
  • 1/2 cup cold butter, cut into pieces
  • 6 tablespoons Gold Medal™ all-purpose flour
  • 4 egg yolks
  • 2 cups milk
  • 5 boxes (1.9 oz each) frozen mini phyllo shells (75 shells)
  • Sweetened whipped cream
Instructions:
  • In a 10-inch heavy skillet, melt 1 cup of sugar over medium heat for 6 to 8 minutes, stirring constantly until it turns into golden brown caramel. Add butter and stir until fully melted. Remove from heat.
  • Combine flour, egg yolks, milk, and 1 cup sugar in a 3-quart heavy saucepan. Heat over low heat until simmering, stirring constantly. Mix in melted sugar mixture and cook for 1 to 2 minutes until thickened. Transfer to a large bowl, cover, and refrigerate for 4 hours.
  • Spoon the delightful caramel mixture into the delicate phyllo shells and crown them with a dollop of airy whipped cream.
