Tiramisu Cake Balls

Tiramisu-flavored cake balls, perfect as is or turned into chocolate-coated cake pops.
Ingredients:
  • 1 (16 ounce) package pound cake mix
  • 0.75 cup water
  • 2 eggs
  • 1 tablespoon finely ground espresso
  • 8 teaspoons coffee-flavored liqueur (such as Kahlua®)
  • 3 tablespoons packed light brown sugar
  • 1 cup mascarpone cheese
  • 3 tablespoons confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • Mix cake mix, water, and eggs in a bowl on low speed for 30 seconds, then increase to medium speed for 3 minutes. Pour the batter into the pan.
  • Bake in the oven until a toothpick comes out clean when inserted into the center, approximately 50 minutes. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Mix together espresso, coffee liqueur, and brown sugar in a small bowl. In a separate bowl, blend mascarpone, confectioners' sugar, and vanilla until smooth, then stir in the espresso mixture.
  • Break apart the pound cake into fine crumbs in a large bowl. Mix the mascarpone mixture into the cake crumbs until everything is well combined, using your hands if necessary.
  • Form small balls of the mixture using a melon baller or spoon, then gently roll them into balls and place on a baking sheet. Refrigerate for at least 2 hours before serving.
