Decadent tiramisu sponge cake soaked in boozy coffee, layered with creamy mascarpone, and chilled to perfection.
Ingredients:
  • 1 (9 inch) sponge cake
  • 0.375 cup strong brewed coffee, room temperature
  • 0.375 cup brandy
  • 1.5 pounds mascarpone cheese, room temperature
  • 1.5 cups confectioners' sugar
  • 3 tablespoons unsweetened cocoa powder, for dusting
Instructions:
  • Slice the cake in half lengthwise to create two layers. Mix the coffee and brandy together. Drizzle the coffee mixture over the bottom cake layer to moisten it, but don't over-soak it.
  • Whip the mascarpone and confectioners' sugar until light and fluffy. Spread half of the cheese mixture over the bottom cake layer, add the second cake layer, and spread the rest of the cheese on top. Generously dust with sifted cocoa. Chill in the refrigerator for 2 hours before enjoying.
