Indulge in decadent chocolate truffles made with Betty Crocker™ cake mix - a delightful treat for all occasions.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 2 tablespoons instant espresso coffee powder or granules
  • 1 container (8 oz) mascarpone cheese, softened
  • 2 tablespoons coffee-flavored liqueur
  • 1 package (24 oz) chocolate-flavored candy coating, chopped
  • 1 1/2 cups bittersweet chocolate chips
  • 1 tablespoon unsweetened baking cocoa
Instructions:
  • Preheat oven to 350°F. Prepare cake mix according to package instructions, using water, oil, and egg whites, and mix in coffee powder. Bake and cool as directed for a 13x9-inch pan.
  • Prepare a cookie sheet with waxed paper. Crumble the cake into a large bowl, then combine with mascarpone cheese and liqueur, mixing thoroughly. Shape the mixture into 1-inch balls and place them on the prepared cookie sheet. Freeze until firm, then store in the refrigerator.
  • In a microwave-safe bowl, microwave candy coating and chocolate chips uncovered on Medium (50%) power for 2 minutes. Stir and continue to microwave in 15-second intervals until melted. Stir until smooth.
  • Take a few cake balls out of the refrigerator at a time. Dip each cake ball into melted chocolate using a fork, making sure it's fully covered, then tap off any excess. Place them back on the cookie sheet and allow them to set. Sprinkle with cocoa and store them covered in the refrigerator.
