Impressive crowd-pleasing ice cream, made effortlessly.
Ingredients:
  • 250ml coffee
  • 60ml liqueur
  • 2 litres good quality vanilla ice cream, softened
  • 4 x 30g Flake chocolate bars, crumbled
  • 18 sponge finger biscuits
Instructions:
  • Prepare a 10 x 20 x 7cm deep loaf tin by lining it with baking paper, ensuring it covers the base and overhangs on the two long sides. Mix coffee and liqueur together in a shallow bowl.
  • Soften ice cream until slightly melty, then divide equally into 2 bowls. Fold chocolate into one bowl and 1/4 cup of the coffee mixture into the other.
  • Layer half of the chocolate mixture on the base of the tin. Dip each biscuit in the remaining coffee mixture and place on top of the ice cream, gently pressing down. Continue with half of the coffee mixture, another layer of biscuits, the rest of the coffee mixture, more biscuits, and end with the chocolate ice cream.
  • Wrap the sides of the paper over the ice cream, then wrap the tin in foil. Freeze for at least 4 hours, or overnight for best results.
  • Before serving, gently peel off the foil and use a hot damp cloth to wipe the outside of the tin. Carefully run a knife along each end to loosen the edges. Flip the tin onto a platter, remove the paper, and slice before serving.
