Decadent twist on tiramisu with a rich chocolate cookie base.
Ingredients:
  • 30 thin chocolate wafer cookies, crushed (1 1/2 cups crumbs)
  • 6 tablespoons butter or margarine, melted
  • 1/2 cup strong brewed coffee (room temperature)
  • 1/4 cup granulated sugar
  • 2 tablespoons coffee-flavored liqueur
  • 1 package (10.75 oz) frozen pound cake loaf, thawed
  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 1 container (8 oz) mascarpone cheese
  • 1 tablespoon unsweetened baking cocoa
Instructions:
  • Preheat the oven to 350°F. Line a 9-inch square pan with foil, leaving a 1-inch overhang on two opposite sides; then spray the foil with cooking spray. Combine cookie crumbs and butter in a medium bowl, then press the mixture into the pan. Bake for 10 minutes. Allow to cool completely for about 30 minutes.
  • In a 1-quart saucepan, bring coffee and granulated sugar to a boil over medium-high heat, stirring occasionally. Remove from heat and let cool completely for about 30 minutes. Then, mix in the liqueur.
  • Slice the pound cake into 13 (1/2-inch) slices and trim the top of each slice to make it even.
  • In a chilled large bowl, whip together whipping cream and powdered sugar with an electric mixer until soft peaks form. Add mascarpone cheese and beat on medium speed until stiff peaks form (avoid overbeating). Spread half of the whipped cream mixture over the crust in the pan. Arrange pound cake slices tightly on top. Brush with the coffee syrup until soaked. Cover with the rest of the whipped cream mixture and dust with cocoa powder.
  • Chill in the refrigerator for 2 hours, then use foil to easily lift out of the pan. Cut into 6 rows by 4 rows, and store covered in the refrigerator.
