Delicious tiramisu made with store-bought sponge cake for effortless layering.
Ingredients:
  • 250.00 ml strong espresso coffee
  • 45.00 gm firmly packed brown sugar
  • 62.50 ml marsala
  • 2 x 250g tubs mascarpone
  • 70.95 gm caster sugar
  • 2 tsp vanilla bean paste
  • 300ml thickened cream
  • 460g packet unfilled round vanilla sponge cakes
  • Cocoa powder, to serve
  • Mini meringues, to serve
Instructions:
  • Mix together the coffee, brown sugar, and marsala in a jug.
  • In an electric mixer, combine mascarpone, caster sugar, and vanilla, beating until smooth. Gradually add thickened cream until firm peaks form and the mixture thickens (do not overmix).
  • If necessary, trim the tops of the sponge cakes to make them level. Cut each sponge cake into three even layers. Place one sponge cake base on a serving platter and gently drizzle 1⁄4 cup of the coffee mixture over the cake, ensuring it absorbs the liquid.
  • Transfer a portion of the mascarpone mixture to a separate bowl and set aside. Spread one-fifth of the remaining mascarpone mixture on the cake. Add another cake layer and continue layering with the remaining coffee mixture, mascarpone mixture, and cake.
  • Smooth the reserved mascarpone mixture over the top and sides of the cake using a palette knife. Chill in the refrigerator for 2 to 3 hours to enhance the flavors.
  • Sprinkle cake with a dusting of cocoa powder, top with mini meringues, and present. Enjoy!
