Family-favorite toads in a hole.
Ingredients:
  • 8 medium (about 500g) beef sausages
  • 2 red onions, thinly sliced
  • 10.00 gm caster sugar
  • 2 tsp red wine vinegar
  • 36.80 gm vegetable oil
  • 115g self-raising flour
  • 20.00 ml finely chopped thyme
  • 1.20 gm salt
  • 1 egg, lightly whisked
  • 250ml milk
  • 23.40 gm wholegrain mustard
Instructions:
  • Preheat the oven to 230°C. In a large bowl, mix flour, thyme, and salt, then create a well in the center. Add the egg, milk, and mustard, and stir until well combined. Let it rest for 15 minutes.
  • Heat a large frying pan over high heat. Cook the sausages, turning occasionally, for 5-7 minutes until cooked through. Transfer to a plate. Reduce heat to medium and cook onions and garlic for 10 minutes until onions soften. Stir in sugar and vinegar and cook for 5 minutes until onions caramelize.
  • Evenly distribute the oil among four 2-cup (500ml) capacity shallow oven-proof dishes. Place on an oven tray and bake for 5 minutes until the oil is smoking. Remove from the oven and distribute the batter evenly among each dish. Top with sausages and bake for 15 minutes until the batter is puffed and golden. Serve on plates, top with onion, and serve immediately.
