Try a quick and healthy toasted chili black bean, spinach, and cheese tortilla. Ready in just 10 minutes!
Ingredients:
  • 100g rinsed, drained canned black beans or kidney beans
  • 30g chopped roasted red capsicum (not in oil)
  • 19.20 gm fresh ricotta
  • Hot chilli sauce, to taste, if desired.
  • 1 (about 48g) wholegrain tortilla
  • 20g baby spinach leaves, plus extra, to serve
Instructions:
  • Transfer the beans to a bowl and gently mash them with a fork. Mix in the capsicum, ricotta, and, if desired, chili sauce. Stir until well combined.
  • Preheat the sandwich press. Lay a tortilla on a work surface. Spread half of it with the bean mixture and add spinach leaves. Fold it in half, spray with oil, and toast until golden. Serve with extra spinach leaves on the side.
