Toasted coconut chocolates

Ingredients:
  • 85g (1 cup) desiccated coconut
  • 200g good-quality dark chocolate, roughly chopped
  • 2.20 gm vanilla essence
Instructions:
  • Preheat your oven to 180°C while you prepare your baking tray by lining it with non-stick baking paper.
  • Evenly distribute the coconut on the lined tray and bake in a preheated oven until it turns a light golden color, about 4-5 minutes. Remove from the oven.
  • While the chocolate melts in a heatproof bowl set over simmering water, ensuring it doesn't touch the water, stir frequently with a metal spoon until smooth (about 3-4 minutes). Once smooth, remove the bowl from the pan and mix in the warm coconut followed by the vanilla essence.
  • Fill the confectionary cases with the chocolate mixture and let it sit at room temperature for 2 hours until firm. Alternatively, you can chill in the fridge for 1 hour until set.
