Delicious cookies with toasted coconut, almonds, and sweet white chocolate for irresistible flavor.
Ingredients:
  • 0.25 cup sweetened flaked coconut
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.75 cup brown sugar
  • 0.5 cup unsalted butter, softened
  • 0.25 cup white sugar
  • 0.5 teaspoon almond extract
  • 1 egg yolk
  • 0.5 cup white chocolate chips, or to taste
  • 0.25 cup toasted chopped almonds, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 2 baking sheets with parchment paper. Spread coconut flakes on one baking sheet and keep the other sheet ready for the cookies.
  • Toast the coconut in the preheated oven for about 6 minutes until lightly browned. Keep the oven on for the next step.
  • In a small bowl, mix flour, baking soda, and salt. In a separate bowl, cream together brown sugar, butter, white sugar, and almond extract. Add egg yolk and milk, then mix. Slowly incorporate flour mixture until almost combined. Stir in chocolate, almonds, and toasted coconut until well combined.
  • Scoop golf ball-sized portions of dough onto the lined baking sheet.
  • Bake in the preheated oven for 8 to 10 minutes until golden on the edges and soft in the centers.
