Coconut cookie bars with toasted coconut and rich chocolate frosting - a decadent treat for coconut enthusiasts.
Ingredients:
  • 4 cups coconut flakes
  • 1 (14 ounce) can sweetened condensed milk
  • 0.75 cup all-purpose flour
  • 0.5 cup corn syrup
  • 0.33333334326744 cup packed brown sugar
  • 0.25 cup butter, softened
  • 1 cup milk chocolate chips
  • 3 tablespoons milk, or as needed
  • 0.5 cup confectioners' sugar
  • 2 tablespoons butter
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Lay out coconut flakes on a baking sheet without greasing it.
  • Toast coconut in the preheated oven, stirring frequently, until golden brown, approximately 10 minutes.
  • Combine sweetened condensed milk, flour, corn syrup, brown sugar, 1/4 cup butter, 2 teaspoons vanilla extract, and salt in a bowl, then gently fold in toasted coconut. Transfer the batter into the prepared baking dish.
  • Bake in the preheated oven for 25 to 35 minutes until golden brown and fully cooked. Allow to cool completely.
  • Melt chocolate chips and milk in a double boiler, stirring often and scraping down the sides to prevent burning. Mix in confectioners' sugar, 2 tablespoons butter, and 1 teaspoon vanilla extract until smooth. Spread frosting over bars and refrigerate for 30 minutes before cutting.
