Peanut Butter Toffee Turtle Cookies

Indulge in chocolate frosted turtle cookies made with Bisquick® and peanut butter for a delicious dessert.
Ingredients:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2/3 cup creamy peanut butter
  • 1 egg
  • 2 cups Original Bisquick™ mix
  • 2/3 cup toffee bits
  • 2/3 cup coarsely chopped peanuts
  • 1 1/3 cups milk chocolate chips
  • 1 1/2 cups caramels (from 14-oz bag), unwrapped
  • 2 to 3 tablespoons whipping cream
  • 1/2 teaspoon vanilla
Instructions:
  • 1. Preheat the oven to 350°F. In a large bowl, use an electric mixer to cream together butter, granulated sugar, brown sugar, and peanut butter until creamy. Mix in the egg until well combined. Add Bisquick mix and mix on low speed until just blended. Gently fold in toffee bits, peanuts, and 2/3 cup of chocolate chips. Drop rounded tablespoonfuls of dough onto ungreased cookie sheets 2 inches apart and flatten with your hand.
  • Bake for 10 to 12 minutes until golden brown. Allow to cool for 1 minute, then transfer the cookies from the baking sheets to cooling racks. In a microwave-safe bowl, heat caramels and 2 tablespoons of whipping cream on High for 1 minute; stir. Microwave for an additional minute, stirring every 30 seconds, until the caramels are melted and the mixture is smooth; add the remaining 1 tablespoon of whipping cream if needed. Mix in the vanilla. Spread the caramel mixture on top of the cookies. Melt the remaining 2/3 cup of chocolate chips and drizzle over the caramel.
