Indulge in irresistible chocolate mint bars.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon mint extract
  • 4 drops green food color
  • 1 cup butter or margarine
  • 4 oz unsweetened baking chocolate, cut into pieces
  • 2 cups granulated sugar
  • 2 teaspoons vanilla
  • 4 eggs
  • 1 cup Gold Medal™ all-purpose flour
  • 2 tablespoons butter or margarine
  • 2 tablespoons corn syrup
  • 2 tablespoons water
  • 2 oz unsweetened baking chocolate, cut into pieces
  • 1 cup powdered sugar
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9-inch pan with shortening and lightly dust with flour. In a small bowl, mix cream cheese and 1/4 cup sugar until smooth. Add 1 egg, mint extract, and food color, and stir until fully combined; set aside.
  • In a 3-quart saucepan, gently melt 1 cup of butter and 4 oz of chocolate on low heat, stirring constantly. Once melted, take it off the heat and let it cool for about 15 minutes until slightly warm.
  • Mix 2 cups sugar and 2 teaspoons vanilla into the chocolate mixture. Blend in 4 eggs one by one, stirring well after each addition. Add flour, then spread the brownie batter in the pan. Gently dollop the cream cheese mixture over the brownie batter. Swirl with a knife for a beautiful marbled effect.
  • Bake for 45 to 50 minutes until fully set. Let cool at room temperature for 30 minutes, then refrigerate for 1 hour.
  • In a 2-quart saucepan, melt 2 tablespoons of butter with corn syrup and water until boiling, stirring often. Remove from heat, then stir in 2 oz of chocolate until melted. Add 1 teaspoon of vanilla and powdered sugar, mix until smooth. Frost the chilled bars with Chocolate Frosting, cut into 6 by 6 rows, and keep covered in the refrigerator.
