Add crushed peppermint candies and a chocolate drizzle to elevate classic frosted chocolate cookies.
Ingredients:
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 oz unsweetened baking chocolate, melted, cooled
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 2 1/2 cups powdered sugar
  • 1/4 cup butter or margarine, softened
  • 3 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 1/4 cup butter or margarine
  • 2 tablespoons corn syrup
  • 1 cup semisweet chocolate chips (6 oz)
  • Crushed round hard peppermint candies, if desired
Instructions:
  • Preheat the oven to 375°F. In a large bowl, blend granulated sugar, 1/2 cup of butter, vanilla, egg, and unsweetened chocolate using an electric mixer on medium speed, or mix with a spoon until smooth. Add flour and salt, and mix until combined.
  • Place rounded teaspoonfuls of dough onto an ungreased cookie sheet, spacing them approximately 2 inches apart. Flatten each cookie with the bottom of a greased drinking glass dipped in sugar until they are about 1/4 inch thick.
  • Bake for approximately 8 minutes until set. Allow to cool for 1 to 2 minutes, then transfer from cookie sheet to a cooling rack. Let cool completely for about 30 minutes.
  • Combine all frosting ingredients in a medium bowl until the mixture is smooth and easy to spread. Frost each cookie, leaving a 1/4-inch border around the edges.
  • Melt 1/4 cup butter, corn syrup, and chocolate chips in a 1-quart saucepan over low heat, stirring constantly until smooth. Drizzle over each cookie and sprinkle with crushed candies.
