Toasted Turkey Cranberry Arugula Sandwich

Tasty turkey sandwich with arugula and cranberry, inspiring variations in the comments.
Ingredients:
  • 2 slices French or Italian loaf bread, lightly toasted
  • 1 1/2 teaspoons mayonnaise
  • 1/2 teaspoon Dijon mustard
  • Several slices of cooked turkey breast
  • 2 tablespoons prepared cranberry sauce or cranberry relish
  • 1 handful of baby arugula leaves or watercress
Instructions:
  • Sear 2 slices of bread until golden brown.
  • Spread mustard on one slice of bread and mayo on the other slice.
  • Stack the turkey breast on the mustard-slathered slice, top with cranberry sauce, and finish with a layer of fresh arugula leaves.
  • Place the remaining slice of bread on top.
  • Halve the ingredient.
