Celebrity chef Tobie Puttock's easy roast chicken is packed with bold flavors and elegance.
Ingredients:
  • 14.40 gm sea salt flakes
  • 1 bunch fresh sage (see note), leaves picked, chopped
  • 1.8kg whole chicken
  • 40g (1 cup) torn ciabatta bread
  • 100g prosciutto or pancetta, coarsely chopped
  • 40g (1/4 cup) pistachio kernels, coarsely chopped
  • 90g (1/3 cup) Soft & Juicy Figs, coarsely chopped
  • 30.00 ml brandy
  • 1 celery stick, coarsely chopped
  • 1 small brown onion, coarsely chopped
  • 1 large carrot, peeled, chopped
  • 500ml (2 cups) white wine
  • Roast potatoes, to serve
  • Steamed greens, to serve
Instructions:
  • Preheat your oven to 180°C. In a mortar, combine sea salt with half of the sage, then crush with a pestle. Pat dry the chicken with a paper towel.
  • Mix together the bread, prosciutto, pistachios, figs, brandy, 1 1/2 tablespoons of oil, and the rest of the sage in a large bowl. Season with salt and pepper to taste.
  • Fill the chicken cavity with the bread mixture, then tie the legs together.
  • Spread a layer of celery, onion, and carrot in a roasting pan. Drizzle with remaining oil. Place the chicken on top and massage the salt mixture onto the skin. Roast for 20 minutes. Pour wine over chicken and continue roasting, basting every 20 minutes with pan juices, until chicken is fully cooked, about 1 hour to 1 hour 10 minutes.
  • Present the chicken on a platter alongside roasted potatoes and steamed greens for a delightful meal.
