Tofu, snow pea and corn stir-fry

Quick, delicious vegetarian dishes with just six ingredients!
Ingredients:
  • 350g firm tofu
  • 56.88 gm peanut oil
  • 150g snow peas, halved diagonally
  • 62.50 ml kecap manis
  • 127.50 gm vegetable liquid stock
  • 425g can baby corn, drained, halved lengthways
Instructions:
  • Dry tofu thoroughly using paper towels and cut into 2cm cubes. Heat oil in a wok over high heat. Cook tofu in batches, turning occasionally, until golden brown, about 2-3 minutes. Place cooked tofu on a paper towel-lined plate to drain excess oil. Reserve 1 tablespoon of oil in the wok.
  • Heat the oil in a pan over medium heat until shimmering. Toss in the snow peas and stir-fry for about a minute, or until they turn a vibrant green. Next, add the stock, kecap manis, and corn, and continue stir-frying for another 2 minutes, or until everything is heated through. Serve and enjoy!
