Flavorful tofu salad with marinated tofu, snow peas, cabbage, carrots, and peanuts.
Ingredients:
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, crushed
  • 0.5 teaspoon grated fresh ginger root
  • 8 ounces extra-firm tofu, drained and diced
  • 1 cup snow peas, trimmed
  • 1 cup finely shredded red cabbage
  • 2 small carrots, grated
  • 2 tablespoons chopped peanuts
Instructions:
  • Prepare the tofu: Combine chili sauce, soy sauce, sesame oil, garlic, and ginger in a large bowl. Add tofu and mix well to coat. Cover and let marinate in the refrigerator for 1 hour.
  • Once the tofu is almost done marinating, boil a pot of water. Add snow peas and blanch for 1 to 2 minutes. Shock them in a bowl of cold water, then drain and pat dry.
  • Prepare the salad by mixing snow peas, cabbage, carrots, and peanuts in a bowl. Then gently toss in tofu and marinade to combine.
