Snow pea, asparagus and tofu stir fry

Ingredients:
  • 18.20 gm peanut oil
  • 1 clove garlic, chopped
  • 1 tsp finely grated ginger
  • 1 bunch asparagus, trimmed and cut into 5cm lengths
  • 1 large zucchini, sliced diagonally
  • 75g snow peas, trimmed
  • 1 bunch baby bok choy, roughly chopped
  • 250g packet firm tofu, drained and sliced
  • 48.80 gm oyster sauce
  • steamed rice, to serve
Instructions:
  • In a wok or large non-stick pan over high heat, heat oil. Add asparagus and zucchini, cook for 5 minutes until tender. Add garlic, ginger, snow peas, and bok choy, cook for 2 more minutes until bok choy wilts. Mix in tofu and oyster sauce, cook for another minute until tofu is heated through. Serve with steamed rice.
