Tofu parmigiana: crispy breaded tofu that tastes just like eggplant or veal. A sneaky and satisfying dish loved by all! Pair with a fresh green salad, angel hair pasta, and garlic bread.
Ingredients:
  • 0.5 cup seasoned bread crumbs
  • 5 tablespoons grated Parmesan cheese
  • 2 teaspoons dried oregano, divided
  • salt to taste
  • 1 (12 ounce) package firm tofu
  • 2 tablespoons olive oil
  • 1 (8 ounce) can tomato sauce
  • 0.5 teaspoon dried basil
  • 1 clove garlic, minced
  • 4 ounces shredded mozzarella cheese
Instructions:
  • Mix together bread crumbs, 2 tablespoons of Parmesan cheese, 1 teaspoon of oregano, along with a pinch of salt and black pepper in a small bowl.
  • Slice the tofu thinly into 1/4-inch slices and soak them in a bowl of cold water. Individually dip each tofu slice into the crumb mixture, ensuring all sides are evenly coated.
  • In a skillet over medium heat, crisp tofu slices in oil. Drizzle with additional olive oil, flip, and brown the other side.
  • Mix together tomato sauce, fresh basil, minced garlic, and the rest of the oregano. Spread a light layer of sauce in an 8-inch square baking pan. Place tofu slices in the pan. Pour the rest of the sauce over the tofu. Sprinkle shredded mozzarella and the remaining 3 tablespoons of Parmesan on top.
  • Roast in a 400°F (205°C) oven for 20 minutes.
