Tofu Sloppy Joes

Try a modern twist on Sloppy Joes with tofu and veggie "beef" crumbles on whole wheat buns for a tasty vegetarian option.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 1 medium yellow onion, diced
  • 1 teaspoon ground cumin
  • 1 pinch salt
  • 1 (6 ounce) can tomato paste
  • 1 (12 ounce) can tomato sauce
  • 0.5 cup ketchup
  • 0.25 cup water
  • 4 tablespoons brown sugar
  • 3 tablespoons barbeque seasoning
  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot pepper sauce (such as Frank's RedHot®)
  • 1 teaspoon paprika
  • 1 pound firm tofu, drained and crumbled
  • 2 medium zucchini, diced
  • 0.5 (12 ounce) package vegetarian ground beef crumbles (such as MorningStar Farms®), thawed
  • 12 (6 ounce) whole wheat hamburger buns, split and toasted
Instructions:
  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add diced onion and cook until soft for about 3 to 4 minutes. Stir in cumin and salt, and saute until fragrant, approximately 2 minutes.
  • Stir in tomato paste in the skillet for 1 to 2 minutes until it breaks up. Add tomato sauce, ketchup, water, brown sugar, BBQ seasoning, mustard, hot sauce, and paprika. Bring to a boil, then simmer covered for 15 minutes. Set aside.
  • In a separate pan, heat 1 tablespoon of olive oil over medium-high heat. Add tofu and zucchini, cook for 5 minutes, stirring occasionally. Mix in vegetarian crumbles and sauce, let it simmer covered for 10 minutes.
  • Prepare the Sloppy Joes mixture and spoon it onto freshly toasted buns.
