Tofu tacos

Vegan tacos featuring flavorful tofu and charred corn tortillas - ideal for hosting guests.
Ingredients:
  • 250g firm tofu, cut into 5mm slices
  • 5.00 gm ground cumin
  • 1/2 tsp chilli flakes
  • 6 corn tortillas
  • 60g rocket leaves
  • 82.50 ml coriander leaves
  • 60g chilli
  • Lime wedges, to serve
Instructions:
  • In a large frying pan, heat half of the oil over high heat. Cook the tofu for 2 minutes on each side, or until golden brown.
  • Pour the remaining oil into the pan to enhance the flavors. Sauté the onion for 3 minutes until it becomes tender. Mix in the cumin, coriander, and chili and sauté for 1 minute to release their fragrances. Pour in the tomato and let it come to a boil. Lower the heat to medium and simmer for 5 minutes, stirring occasionally until the sauce slightly thickens. Finally, gently add the tofu and stir until coated in the flavorful sauce.
  • Chargrill the tortillas over medium heat until charred. Plate them and add rocket, tofu mixture, coriander, and jalapeños, if desired. Serve with lime wedges.
