Authentic Thai tom yum kai soup - perfect for sharing with loved ones.
Ingredients:
  • 1 stalk lemon grass, smashed and chopped
  • 1 (1 inch) piece galangal, thinly sliced
  • 3 kaffir lime leaves, torn
  • 4 tablespoons fish sauce
  • 2 teaspoons chile paste
  • 8 ounces fresh tomatoes, chopped
  • 2 ounces button mushrooms, chopped
  • 1 (8 ounce) skinless, boneless chicken breast sliced into strips
  • 4 tablespoons lime juice
  • 2 fresh Thai chiles, crushed with a knife and halved
Instructions:
  • 1. Boil water in a saucepan and infuse with lemon grass, galangal, and kaffir leaves for 1 minute. Stir in fish sauce and continue cooking for another minute. Lower the heat to medium, stir in chile paste, then add tomatoes and cook for 2 to 3 minutes. Toss in mushrooms and cook for 1 more minute. Turn up the heat to high, add chicken, and cook until it is done, about 5 minutes. Finish by stirring in lime juice.
  • Stir in the chiles and take the soup off the heat.
