Elevate your chip game with zesty tomatillo avocado salsa - a refreshing twist on traditional dips.
Ingredients:
  • 8 fresh tomatillos, husks removed, rinsed
  • 1 serrano pepper, stemmed, seeded, and chopped
  • 1 jalapeño pepper, stemmed, seeded, and chopped
  • 1 clove garlic, peeled
  • 2 tablespoons olive oil
  • Sea salt, to taste
  • Fresh ground pepper, to taste
  • 1/4 cup chopped cilantro leaves
  • 1 small lime, juiced
  • 1/8 teaspoon cumin
  • 2 medium ripe avocados, pitted and peeled
  • 1 medium white onion, chopped
Instructions:
  • Preheat the broiler on high by placing a rack 5 to 7 inches from the top heating element.
  • Prepare the tomatillos: Halve them and arrange them cut side down on a foil-lined baking sheet alongside the serrano peppers, jalapeño peppers, and garlic. Then, generously drizzle with olive oil and sprinkle with sea salt.
  • Char the tomatillos, serrano peppers, jalapeño peppers, and garlic under the broiler until blackened and tomatillos are dark green, about 10 minutes, flipping occasionally.
  • Peel the roasted pepper skins easily: Place the tomatillos, serrano, and jalapeño peppers in a sealed plastic bag to steam for 10 minutes. Peel off the skins once they have loosened, and discard them. For a milder salsa, take out the ribs and seeds from the peppers.
  • Combine the cooled roasted tomatillos, peppers, garlic, cilantro, lime juice, cumin, salt, and black pepper in a blender or food processor and pulse to blend. Scrape the sides as needed. Add avocado and raw onions, and blend until smooth. Adjust seasoning with salt and pepper to your taste.
