Whip up this delicious pasta dish in just 20 minutes for a perfect start to your Friday night.
Ingredients:
  • 400g linguine (see note)
  • 18.20 gm olive oil
  • 8 anchovies, drained, roughly chopped (optional)
  • 3 garlic cloves, crushed
  • 1kg ripe tomatoes, chopped
  • 1 to 2 birdseye chillies, deseeded, finely chopped (see note)
  • 250.00 ml basil leaves, torn
  • 125.00 ml grated parmesan cheese
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender.
  • Heat a heavy-based non-stick frying pan over medium-high heat. Sauté the anchovies and garlic in oil for 1 minute. Then, add the tomatoes and chillies, and cook for 5 minutes until the tomatoes are tender but still hold their shape.
  • After draining the pasta, gently toss it back into the saucepan along with the tomato mixture, basil, salt, and pepper. Heat over low heat until everything is well combined and warmed through. Portion the pasta into 4 serving bowls, sprinkle with Parmesan cheese, and serve.
